Recipe: Zucchini Relish


Linda's Zucchini relish

10 c. ground zucchini (any size; for large ones cut out seeds)
4 c. ground onions
5 tbsp. salt
1 red bell pepper, chopped
(You can add more red bell peppers if you want more color)
1 green bell pepper, chopped
4 c. Cider vinegar  (I have made it with ½ white vinegar and ½ Cider)
2 tbsp. mustard powder
1/2 tsp. turmeric (do not add extra-too much is noticeable)
1 tbsp. celery seed
4 c. sugar

Combine zucchini, onions and salt. Cover with water. Let stand overnight. Drain and rinse well. Add peppers, red and green.
Combine vinegar, mustard, turmeric, celery seed and sugar. Pour over zucchini mixture in large pot. Bring to boil. Turn heat down to low and simmer for 30 minutes. Pack in hot sterilized jars.  I use ½ or ¼ pt jars and water bath can for about 15-20 minutes just enough to get the seals to pop.
